Location Architect The owners of Squeaky Bean have a habit of doing things a bit out of the ordinary, so when they closed the doors to their incredibly successful Highlands restaurant, their loyal followers were wondering what would happen next. To their delight, and ours, they hired Jordy Construction to build-out their new, much larger restaurant in the historic Saddlery Building in LoDo, which opened roughly one year after the old one closed. Jordy Construction was awarded the project based on preliminary budget pricing and an interview with the restaurant owners. It didn’t take either side long to determine that we were a perfect fit for one another. Jordy worked with the design and owner teams to finalize the restaurant’s design and budget to everyone’s satisfaction, and once a permit was issued, immediately went to work. The entire build-out took only 11 weeks from start to finish, complete with all new electrical and mechanical systems. The space boasts a beautiful open floor plan with rich wood millwork and floor elements that co-mingle with the building’s historic timber framed structure and unfinished brick walls. A stunning expo kitchen provides a constant flurry of activity from the maestro chef, Max Mackissock, and his staff. Many of the materials used in the restaurant, such as light fixtures, a vintage mixed drink vending machine/host stand, and vintage bevador cooler, were painstakingly searched for by owner, Johnny Ballen, to create the perfect accents to the phenomenal space.
